Tea Party Dessert from Galoshes

Looking for the perfect, not to sweet, great with a good cup of tea or coffee dessert?  My Mom (Galoshes), of Sommers Breeze Antiques, is here today to share a recipe.

Since Taylor is a mom of three under the age of three, I thought I would snap a few pictures as I tried out a new recipe. This way when a day was over loaded with 3 kids, 160lb dog, substitute teaching, board member of The Mothers Of Multiples, wife, Artist, Etsy Shop owner, blog holder and just Taylor, this would give her a back up blog post. So I am Galoshes, {Lisa, Taylor’s mom} 

I found this recipe and thought it looked wonderful. I tried it and found that it is suited for people that prefer desserts with a less sweet side. {this rules me out, as I generally like things much sweeter than the general public.} So if you prefer to have a dessert that is not overly sweet, this would be right up your alley.


Chocolate Chip Strawberry Shortcakes:
Prep time 20 mins Bake @ 375 for 20 mins then cool.
A: 3 Cups sliced, fresh strawberries
B: ¼ Cup sugar
BISCUITS:
C: 2 Cups all-purpose flour
D: 3 Tablespoons sugar, divided
E: 3 Teaspoons baking powder
F: ½ Teaspoon salt
G: 1 Cup heavy whipping cream
H: ½ Cup + 1 Tablespoon melted butter, divided
I: ½ Cup chocolate chips {the recipe called for mini semi sweet, I just regular chip size milk chocolate chips}
J: Whipped Cream, if desired.

In a small bowl, combine A & B Cover with plastic and put in the refrigerator, this creates a juice.
In a large bowl combine C, 2 Tablespoons of D, E and F.
In a medium bowl combine G and the ½ Cup of H and stir into the dry ingredients until a thick batter forms. Gently stir in I.


Drop by 1/3 Cupfuls onto a well greased baking sheet. Brush with the remaining 1 Tablespoon butter. {H] and sprinkle with the remaining sugar { D}


Bake @ 375 for 20 minutes or until golden brown {time may vary 18-20 mins} Remove from baking sheet onto cooling rake. Allow to cool.


Cut biscuits in half horizontally, spoon strawberries onto the bottom halves. Top with whipped cream if desired, replace biscuit tops. Serve right away. Makes 8 Large sized desserts.

I like home made whipped cream and I added a twist for this dessert by adding strawberry extract in place of vanilla.
Whipped Cream:
Put your metal bowl and beaters in the freeze to get them nice and cold. When cold, add 1 1/3 Cups Heavy whipping cream, 1 teaspoon strawberry extract, 2 Tablespoons powdered sugar, 1 tablespoon granulated sugar, 1 teaspoon cream of tartar. { there are other recipes for whipping cream, or use canned or tubs.
If you like things on the sweeter side like me, add more chocolate chips, and use frozen pre-sugared strawberries for the extra juice.
